Banana Bread

3-4 over ripe bananas mashed to yield about 1 1/4 cups

1 c sugar

1 egg

Mix the bananas, sugar and egg together.

1 1/4 c sifted flour

1/2 tsp salt

1 tsp baking soda

Mix the dry ingredients together and add to the banana mixture.

Add 1/4 to 1/2 c chopped nuts.  Mix into batter.

Pour batter into a loaf pan.  Drizzle 1/4 c butter over the top.

Bake 1 hr at 325 F.

Notes:  For the best results - mashed bananas should be lumpy not smooth like baby food.  Do not depend on tester straws to determine if done - bananas will make the bread moist ever after baking 1 hour.
